Somehow when summer begins and the sun comes out many people think it’s BBQ time. But it’s always BBQ weather in our house, actually the best one of the year is breakfast on New Years Day! Can’t beat a BBQ to kick of the new year.
It’s pretty safe to say that making a home made burger and flame grilling it outside is up there as a favourite meal, and that’s coming from an ex vegetarian of 13 years with sometime vegetarian tendencies to this day.
When the sun shines and the temperatures rise you can’t help but want to turn the BBQ on. And that normally involves either the local butcher when I’m organised, or M&S when I need convenience. At M&S they are all about the Spirit of Summer range this year.
M&S Product Developer Kirsty Adams commented on her inspiration and favourites from the BBQ range :
The inspiration behind the Spirit of Summer range is ‘You only need a knife and fork to travel this summer’. Our teams have travelled around the Mediterranean finding those tasty and innovative dishes you eat whilst you are on holiday so you can have your Med inspired dish right here at home. Our new Grill lines are excellent for mid-week meals as well as the BBQ. Some of the hero products from the range include;
- Skinny Beef Shish Kebab – under 100 calories per kebab, made with the leanest cuts of beef and served with a tomato dressing
- Smoked BBQ Pork Rib Rack with Pomegranate & Chilli Glaze – a twist on BBQ, this sweet and sticky pomegranate sauce has a hint of chilli
- Salmon Koftas wrapped in Courgette – taken inspiration from the teams trip to Istanbul, salmon and trout koftas with pinenuts innovatively wrapped in courgette – great for the BBQ
- Piri Piri Prawn Skewers – inspired by gambas pil pil a classic Spanish dish

What was our favourite?
The one that tops our list is the Pesto Chicken Flatties. I actually haven’t had pesto in a while, so to taste it again on chicken was a really delicious treat. Here it is cooking away alongside some M&S burgers.
The end result of this treat were M&S Steak and Cheese burgers and Pesto Chicken Burgers with lettuce freshly picked from our allotment and M&S baps. Nothing too fancy, just an awesome tasting meal! I should say that the lettuce is a particularly cool achievement for me to grow myself, and I’m looking forward to my summer of produce from my allotment, all grown from seeds from Hillmount Garden Centre.

I would say it’s the best BBQ range they’ve ever done. Everything we tried was delicious and I’ve no doubt we’ll be back in store getting our BBQ fixes for the rest of the summer!
