It might not feel like it right now, but Summer is coming. May is just over a week away and as an ex weatherman, I’m well aware that we can often get a lovely mild and sunny week during that last month of Spring. So of course the summery food is starting to arrive, and where better to get Summer inspiration from than the countries around the Mediterranean. Well our favourite food store, Marks & Spencer, is doing just that. Let’s have a look at some of the Spirit of Summer range making its way into M&S.
For creating main courses
I love truffle and this Truffle Pesto sounds divine, they recommend stirring into risotto or adding to an omelette, I think I’ll be adding it into a lovely bowl of pasta!
Turkish Sweet and Sour Fig Relish, with figs, apples, balsamic and cinnamon. This could be making its way into my Med version of the Ploughman’s sandwich. Granary bread, Cornish Cruncher cheese, and Turkish relish!
Datterini Tomatoes from southern Italy, are semi-dried and hand-bottled with basil in olive oil. Sauté with chilli and garlic for a simple pasta sauce. Oh my!
Gelato – Nothing screams Mediterranean summer holidays more that gelato!
Anyone for Strachiatella Gelato with dark chocolate pieces or Tiramisu Gelato, made with Marsala wine swirled with coffee sauce, chocolate and sponge cake pieces?
Sicilian Lemon Sorbet is your lighter option than Gelato. Makes you want to go to Italy for a sunshine break. Actually it brings back memories of dinner on the deck of a cruise ship sailing past the stunning island of Capri.
